Cove Beach, the new luxury dining and leisure destination boasts a unique take on beach side dining based on the ‘Cuisine de la Joie’ concept – ‘simple yet tastefully refined’ cuisine.
Led by talented Chef Vergan Robert and his team, the one of a kind gourmet menu is inspired by the French Riviera and the heart of Italy. Vergan, previously the chief consultant trainer at Ecole de Cuisine at Alain Ducasse, has put together a selection of dishes prepared with the finest meats and sea gems, the freshest vegetables and highest standard ingredients taking guests on a Mediterranean culinary journey.
Dishes include a selection of pasta, risotto, sea and meat specialties, perfect for lunch or dinner. To start off, the grilled marinated octopus salad with chickpeas, baby spinach and baby potatoes is delicious, whilst for the main courses, favourites include the homemade tortellini with spinach and the slow cooked cured salmon with cucumber yoghurt. All dishes can be perfectly paired with the signature Cove Beach Château Barbeiranne, a special cuvee Rose wine made in Provence and cited by experts as a well-balanced and suave vintage.
