UAE, March 2017: Set to take Dubai’s thriving culinary scene by storm, Executive Chef Fernando Galbiati brings an impressive pedigree and dynamic, innovative energy to create an exemplary dining experience at the recently opened Clubhouse at Trump International Golf Club, Dubai.
Italian through and through, he constantly pushes boundaries with inspired flavour combinations and creative flair, delivering inventive yet approachable cuisine and firmly placing him as an up-and-coming chef to watch in the region. Having grown up in the small town of Seregno, near Lake Como, Fernando’s roots were planted from a young age for a future career as a chef. Homegrown, seasonal produce and farm-to-table living were part of the culture and daily life and he grew up watching and helping his mother as she prepared every dish from scratch. As Chef Fernando’s passion for cooking grew he took the first steps into the profession by attending private chef school at Collegio Ballerini and commencing with five years of technical training in Atlanta, U.S before returning to Italy to earn his culinary stripes at Madonna di Campiglio, Portofino and Lake Garda. “On my very first day as a professional chef, I was tasked with cleaning out boxes of basil to prepare pesto, this sparked a long lasting affinity with this fragrant herb,” Chef commented. The experience later inspired him to create his signature dish, Paccheri pasta with fresh tomato sauce, made with three different varieties: ricotta cheese, deep fried violet eggplant and basil leaves. The allure of travel and culinary exploration eventually took him to London, working for legendary chef Pierre Gagnaire at the celebrated Michelin-starred restaurant, Sketch. For many this would be a career pinnacle, however not for Fernando who is constantly striving to push his boundaries. Bice Restaurant at Hilton Dubai Jumeirah Beach, where he had the opportunity to hone his culinary skills and feed his creativity by collaborating with Michelin-starred chefs such as Claudio Sadler, Sergio Vineis and Paolo Gramaglia. Fernando’s determination and passion then brought him to the kitchens of Social by Heinz Beck at The Waldorf Astoria Dubai Palm Jumeirah. During this time he had the rare opportunity to spend time in Rome, working at Heinz Beck’s illustrious three Michelin-starred restaurant, La Pergola. Now a new chapter begins for Fernando as he oversees the dining at Trump International Golf Club, Dubai, having assembled a talented team that shares his passion and vision. With a culinary philosophy centered around the glories of simple, honest and uncomplicated food combined with a strong foundation of classic Italian cooking. With this week’s opening of the venue’s upmarket Fifth Avenue Restaurant, this Chef creatively explores how his Italian roots and belief in strong culinary foundations culminates in an innovative and exceptional dining experience. Fernando’s beautifully crafted dishes take guests on a visually stunning journey.
