Privilege Launches a Vibrant New Summer Menu Served in the Clouds

Enjoy a delicious Moroccan-inspired menu high up on the 75th floor of SLS Dubai

 

May 2022 | Dubai – The newly opened Privilege at the iconic SLS Dubai has announced the launch of its sky-high summer menu. Served poolside on the 75th floor, the menu draws on inspiration from Moroccan and French cuisines with a selection of dips, appetizers, salads, main courses, tajines, and desserts for guests to indulge in while lounging poolside.

 

Diners can expect an extensive menu served al fresco high up in the sleek and stylish club. The sharing style starters and salads highlight the best local produce with Seasonal Emirati Vegetablesserved with a selection of dips; Watermelon Saladwith fig, grilled olives, Emirati honey and halloumi. Move on to a feast of Moroccan dips from theArtichoke, the roasted pepper and Lyonnais onion Taktouka, Courgette, and Black Truffle.

 

Onto the appetizers, signature dishes include theLamb Sharhat with lavash flatbread and roasted eggplant topped with yoghurt and a sprinkling of pomegranate seeds; Pastilla filled with succulent duck breast, cinnamon, plums, apricots, and almond. For a taste of France with the flavours of Morocco, enjoy a vegetarian Croque Madame with egg, brie, cauliflower, eggplant, potato, zucchini, molasses, and pomegranate.

 

For the main event, guests can enjoy a variety ofTajines including a Charmoula Grilled Prawns seasoned with mint, chilies and toasted Moroccan spices. For a taste of Rabat, dine on a tajine of Wagyu Beef with apricot, prunes, and cinnamon;Seafood with potatoes and carrots, Champignon with chickpea and tomatoes, and Baby Chicken with preserved lemon, salted French butter, and olive.

 

The pièce de resistance of the new Privilege menu features desserts including Rose & Raspberry Choux, a light rose mousse, and a refreshing raspberry coulis; a Pistachio Baklava served with a creamy mastic ice cream, or a Parisienne-inspiredChocolate Fondant paired with fresh orange and saffron sorbet.

 

Privilege welcomes all to catch a glorious Dubai sunset all summer long alongside this spectacular new menu served 75 floors up.
